As a child, l typically didn't like brussels sprouts at all! But now I love them, especially when they're roasted. Add this wonderful bacon and cheese sauce to the roasted brussels sprouts and they are completely irresistible. #nikicuisine

Ingredients

6 servings
  1. 1 1/2 poundsbrussels sprouts, halved
  2. 8 ozbacon, cooked and crumbled
  3. 1 cupsharp cheddar cheese, grated
  4. 1/2 cupfontina cheese, grated, optional
  5. 3/4 cupheavy cream
  6. 2 tablespoonsextra-virgin olive oil
  7. 1egg
  8. 1 sprigfresh rosemary, minced
  9. 1 teaspoongarlic powder
  10. 1 teaspoononion powder
  11. 1/2 teaspoonred pepper flakes, optional
  12. to taste Kosher salt and freshly ground pepper

Cooking Instructions

    Pre-heat oven to 400°F.

    Place brussels sprouts in a baking dish and toss in olive oil and season generously with salt and pepper.

    Roast in oven for 15-20 minutes, or until semi-softened.

    Meanwhile, in a large bowl, whisk together egg, heavy cream, rosemary, garlic powder, onion powder and red pepper flakes (if using), then stir in cheeses.

    Remove brussels sprouts from oven and add 3/4 of the bacon to the baking dish. Pour cheese mixture over the top and stir everything together, then top with remaining bacon.

    Reduce oven temperature to 350º, return baking dish to oven and bake for 20-25 minutes, or until cheese is bubbly and just set.

    Remove from oven and let cool 5 minutes before serving.
