  1. 1 packagefrozen fish soup mix (about 24 oz)
  2. 2green bell peppers
  3. 1red onion
  4. 2 clovesgarlic
  5. 1 cancrushed tomatoes (14 oz)
  6. 4 1/4 cupsfish stock (I used the water from cooking mussels) or 2 fish bouillon cubes and 4 1/4 cups water
  7. 1 cupwhite wine
  8. Olive oil (extra virgin)
  9. 1 tspsweet paprika
  10. Ground pepper
  11. Salt
  12. 1bay leaf

    The ingredients:

    Finely chop the peppers along with the garlic and onion (it's better if you use a food processor).

    Cover the bottom of a pot with oil, set to medium heat, and sauté the chopped mixture for 5-6 minutes, adding a pinch of salt.

    Add the paprika and stir to prevent burning.

    Add the crushed tomatoes, stir, and let it sauté for 5 minutes covered, stirring occasionally.

    Add the fish mix and sauté for a few minutes. I usually add a handful of peeled frozen shrimp, but that's optional.

    Add the wine, increase the heat, and boil for a few minutes to evaporate the alcohol.

    Add the fish stock, a pinch of ground pepper, and the bay leaf. Cook semi-covered for 20 minutes. Halfway through, taste and adjust the salt if necessary.

    It can be served as is, or you can add noodles or rice (add when the precise cooking time is left for each and add more stock or water if necessary). I love it with some garlic-fried croutons!
