Ingredients

  1. 1Carrot
  2. 1Potato
  3. 1/4 cupPeas
  4. 5-6Beans
  5. 1/8 cupBeetroot
  6. 1/4 cupCauliflower florets
  7. 1Onion
  8. 1Tomato
  9. 1 inchpiece Ginger
  10. 2 clovesGarlic
  11. 1/8 tspFennel seeds
  12. 1Green chilli
  13. 1 tspRed chilli powder
  14. 1/4 tspTurmeric powder
  15. 1 tspCoriander powder
  16. 1/4 tspGaram masala
  17. 1 tspSalt
  18. 1/2 cupCoconut milk
  19. 1/2 tspMustard seeds
  20. 1 tspCoconut oil
  21. 1 strandsCurryleaves
  22. 1 tbspCoriander leaves

Steps

  1. 1

    Pressure cook all the vegetables for 1 whistle.

  2. 2

    Heat oil in a kadai and splutter mustard seeds.

  3. 3

    Add finely chopped onion, finely chopped green chilli, curry leaves, crushed fennel seeds and ginger garlic paste.

  4. 4

    Saute well until the onion become light brown in colour.

  5. 5

    Add turmeric powder, red chilli powder, coriander powder and garam masala.

  6. 6

    Saute for few minutes.

  7. 7

    Then add chopped tomato and cook till the tomato becomes soft.

  8. 8

    Add cooked vegetables, water as per your consistency and salt.

  9. 9

    Mix well and cook it for 5 minutes in medium - low flame.

  10. 10

    Add coconut milk and switch off the flame.

  11. 11

    Garnish with some coriander leaves.

  12. 12

    The tasty vegetable kurma is ready to serve.
