An easy to fix dish, serve it as a side dish or have it with salad leaves, it's a meal by itself...
Steps

Cut the baby potatoes into quarter inch wide wedges, slice the peppers/ capsicum
- 2
Add salt, pepper powder, sprinkle the herbs, add the Olive oil and mix it all well
- 3
Bake in an oven at 200° for 20 minutes, toss the contents and further bake for 10 minutes

Serve on a bed of salad leaves
- 5
Variation- try the same with mushrooms, beans, cauliflower
