Soak the tiger nuts. Place them in a pot and cover completely with filtered water for 48 hours. Change the water daily, as the tiger nuts release some residue, and if you don't change it, they may absorb some of it back in.

Once the tiger nuts are soaked, put them in a blender (you can also use an immersion blender) with about 1 cup of water and blend until you get a coarse paste. (If you have questions, you can check the video link below:

Now that you have a paste, gradually add the rest of the water while blending to extract as much flavor as possible from the tiger nuts.

Add the sweetener and blend a little more to mix everything well.

Next, use a fine mesh strainer to remove all the tiger nut solids. For an even smoother drink, strain again through a cheesecloth or fine mesh sieve.

Finally, pour the horchata into a pitcher or bottle and refrigerate until very cold. You can also put it in the freezer for a short time to enjoy it slightly slushy.
