Steps

Wash the Urad Dal and rice separately.

Mix the Urad Dal and rice and soak them in a container in water for 5-7 hours. Soak for more than 3 hours and not more than 7 hours.

Grind the soaked Urad dal and rice in the mixer grinder to make a fine paste. Part by part grind and store the batter in a large container.

Allow the batter to ferment overnight. The key point is to soak the mixture and make it into the batter the day before you want yo cook the dhoklas.

Next day morning, you will see that the batter has fermented and become fluffy. It's perfect !

Make a paste of ginger and green chillies and add into the batter.

Grind the black pepper for a second or two in the mixer grinder to obtain not so fine powder.

Add salt and Haldi and mix the batter with a light hand.

Prepare the steamer to steam the dhoklas. Pour the batter in the steamer plate / mould.

Sprinkle the coarse black pepper on it and leave the dhoklas to be cooked

Allow it to steam for 10 - 15 mins. Keep checking by inserting a tooth pick into the dhokla

If the dhokla batter stopa sticking to the toothpick, it's cooked ! Else continue to steam.

This dhokla is best served with yummy Aam Ras

You may serve hot steamed dhoklas with green chutney and sweet imli chutney.
