Ingredients

  • 1-8 ouncepkg softened cream cheese
  • 1 cupsoftened butter
  • 1 1/2 cupssugar
  • 1 1/2 tspvanilla extract
  • 4eggs
  • 2 1/4 cupsall purpose flour - divided
  • 1 1/2 tspbaking powder
  • 1/2 tspsalt
  • 2 cupsfresh or frozen cranberries
  • 1/2 cupchopped pecans
  • Confectioner's sugar

Steps

  1. 1

    In a mixing bowl, beat cream cheese, butter, sugar and vanilla till smooth.

  2. 2

    Add eggs, one at a time, mixing well after each addition.

  3. 3

    Combine 2 cups of the flour, baking powder and salt; gradually add to butter mixture.

  4. 4

    Mix remaining flour with cranberries and nuts; fold into butter mixture. Batter will be very thick. Spoon into a greased and floured fluted tube pan.

  5. 5

    Bake at 350 degrees for 60 to 70 minutes or until toothpick comes out clean (60 minutes works for my oven).

  6. 6

    Let stand 5 minutes before removing from pan. Cool on a wire rack. Before serving, dust with confectioner's sugar.
