Cheesy Veggie Pasta

Ingredients

  1. 1large broccoli head (including stem)
  2. 1Green bell pepper
  3. 3sliced carrots
  4. 1Red bell pepper
  5. 1White onion
  6. 1 packageSliced baby portobello mushrooms
  7. 1 lbspaghetti
  8. 8 ozvelveeta (dubbed)
  9. 1 canmild rotel
  10. 1/2 cupmilk
  11. 1 tbspsalt
  12. 1 tbsppepper
  13. 1 tbspcayenne pepper
  14. 1 tbspsriracha
  15. Olive oil

Cooking Instructions

    Boil water to cook spaghetti.

    Chop veggies

  3. 3

    Add to large pot with olive oil and stir for a minute. Then add 1/2 cup water and cover for 10 minutes to steam the veggies.

    Cook spaghetti.

    Add can of rotel, drained, and 1/2 cup of milk to veggies and add cubed velveeta. Mix well until cheese is melted and has formed a cheesy sauce.

    Add mixture to cooked spaghetti and serve hot!
