Take a big bowl and add flour, sugar, water in it and mix it well till sugar has dissolved. Then add saunf.

Keep mixing it until it's free of any lumps. The mixture should be runny so add the water as required. Keep the batter aside for at least half a hour or up to an hour so all the ingredients have to merge as one.

The skillet used to make malpua is one with flat and broad base used for shallow frying.

Put the ghee in the skillet. Once hot, put the flame to medium. The ghee should not be too hot while making malpua as it could burn the malpuas. So keep the flame to medium throughout the process.

Put the mixture in the skillet using a table spoon in small portion.

When poured into the ghee, the batter will sit on the base and won't rise up immediately, don't worry and let it take it's time. After few seconds turn it to another side, then let it cook until it has turn golden.

Repeat the process with the rest of the batter and make the tasty malpuas.

Enjoy them with rabdi or kheer as they enhance the taste.
