Meatball Soup (So'o Apu'a)

Chop the vegetables into small pieces and sauté them until they soften.

Add about 4 cups warm water (about 1 liter), a pinch of black pepper, and oregano.

To thicken the soup, add 3 tablespoons cornmeal.

Next, prepare the meatballs: combine all the ingredients—ground beef (14 oz/400 grams), 3 tablespoons cornmeal, 1 tablespoon all-purpose flour, cumin, parsley, and 1 egg. Mix well.

Shape the mixture into small balls and add them to the soup. Let simmer for 10 minutes.
