Ingredients

8 servings
  1. 1 CanChickpeas
  2. 1Cauliflower
  3. 1Sweet potato
  4. Halfa bag of Spinach
  5. HandfulApricots
  6. Cherry tomatoes, halved
  7. 500 gRed pulse lentils
  8. 1 cancoconut milk
  9. Coriander seeds
  10. Cayenne pepper
  11. 4little red onions
  12. 2table spoons of Pickle (optional)
  13. 5 clovesgarlic
  14. 1 inchginger
  15. Coriander stalks + leaves
  16. jarLime pickle
  17. Yoghurt
  18. Fresh lime

Steps

  1. 1

    Chop everything up and place the onions, garlic, ginger and spices into the pot first

  2. 2

    Then add chopped cauliflower and sweet potato

  3. 3

    Then the coconut milk and some extra water. As well as the lentils.

  4. 4

    Pour the other ingredients in after the other veg is softened and let the pot sit for around 20 mins simmering. Or until the lentils are cooked.

  5. 5

    Serve with coriander, yoghurt and lime pickle.

  6. 6

    We also made some chipatis (Paul Hollywood’s recipe is very easy!)
