Steps

Take a bowl and add All purpose flour,salt, ajwain in it.Also add 2tsp ghee and mix well.

Now add little by little water to the above flour and knead.Keep aside the dough for 15mins.

Now take the dough and knead again for a minute.Make small balls and roll out with the help of rolling pin.

Apply ghee all over and put some All purpose flour & fold from four sides.Put some All purpose flour and roll again.

Now again put some ghee all over and then All purpose flour all over.Fold from opposite sides and roll again.

Now on it again apply some ghee + All purpose flour all over and do not fold.Just make a cylindrical roll and flatten it.

Cut out strips of it and put on a plate.

Heat oil in a pan and deep fry above matharis in it on low-medium flame till brown.

Repeat same with remaining dough.
