Samosas are beautiful pastries in that you can use whatever filling you like, chicken, beef, pork, vegetables.. You name it. For this recipe I went the veggie way.

Samosas are beautiful pastries in that you can use whatever filling you like, chicken, beef, pork, vegetables.. You name it. For this recipe I went the veggie way.

Steps

Peel and wash the potatoes, then cut them into small cubes.

Cut the green bell pepper into cubes

Wash and grate the carrots.

Cut the onion into small cubes
- 5
Boil the potatoes and carrots for about 3 minutes until the potatoes just start to soften(don't overcook because we'll be deep frying the samosas)

Meanwhile, in a separate pan, put in your oil, sauté the onions, ginger and garlic for about 2 minutes.

Add the per-boiled potatoes and carrots (ensure to drain out all the water) into the pan, plus the bell pepper and sauté for about one minutes

Add in all other ingredients and mix to incorporate. Allow it to cool completely.

Filling is ready for use. Fill the pockets and fold then fry.
