Steps

Remove mushroom stems and chop roughly

Smeer butter on underside (gilled side) of each mushroom and season to taste

Microwave mushrooms for +-2 minutes or grill till cooked or blanche briefly without butter

Combine feta, cheddar, biltong, stem pieces & tobasco in a bowl. Share between mushrooms. Place under hot grill till melted

Cut two circles from bread using wine glass or coffee cup. Butter and toast bread.

Fry two eggs in a drop of olive or canola oil.

Assembly: place grilled mushrooms in centre of plate. Place toast on top of each. Add egg to each
