Red risotto with chorizo (or fake bacon)

Ingredients

  1. 1shallot, finely sliced
  2. 1 clovegarlic, finely sliced
  3. 40 gsliced chorizo (20g chorizo / 20g fake bacon, chopped small)
  4. 1/2 bunchcoriander
  5. 500 mlveg stock
  6. 200 gchopped tomatoes
  7. 150 garborio rice
  8. 100 mlred wine
  9. 25 gParmesan
  10. Evoo, s&p

Cooking Instructions

    Oil in pan on medium. Add coriander stalks, shallot, garlic and chorizo / fake bacon and fry for 5 mins to soften shallot and start to crisp chorizo.

    While it's cooking, heat stock with tinned tomatoes in a pan.

    Add rice to fried mix and stir to coat grains. 1-2 mins. Then add red wine to rice mix. Stir and cook to nearly all gone, then add stock/tomato mix one ladle at a time, waiting for it to absorb before adding more. 20 mins or less.

    When rice is al dente, add last ladle of juice. Add grated Parmesan and season. Take off heat and cover. Leave for 5 minutes. Serve topped with cheese and coriander.

I'm vegetarian & allergic to eggs, but my wife eats meat. I prepare all meals, often converting meat recipes in to vegetarian ones. Many of my recipes show measurements for both meat and vegetarian versions, often for the same meal... simply cooking a common sauce in one pan then using seperate pans for meat and veg to combine with sauce when served
