Easy Majorcan Sunday Roast Lamb
My neighbouring farmer gave me half a lamb and this recipe was in the Times magazine the Sunday before, so I thought I would give it a go.

Roast the lamb on high 220 for 20 minutes drizzled with oil and salt and pepper.

Remove lamb and set aside. Turn oven down to 160. Lay all vegetables in base of roasting tray, apart from the potatoes, place the lamb on top.

Pour over the wine and stock.

Roast covered in foil for 6 hours.

Bring pan of water to boil. Add peeled potatoes simmer for 10 minutes. Strain and shake to fluff up the edges. Add to oven in separate roasting tin drizzled in oil for the last 1.5 hours of cooking time.

Enjoy! The lamb should fall off the bone.
