Steps
- 1
Drain artichokes, and finely chop. Mix in diced onions, celery and grated potatoes.
- 2
Add the rest of the ingredients and mix.
- 3
Form patty sized balls with the mixture. If the mixture is too wet, add more flour and breadcrumbs. If it is too dry, add a bit of oil.
- 4
Once patties are formed, place in fridge for about 20 minutes. This allows them to keep their shape while frying.
- 5
Prepare a station for coating. Put milk, flour and breadcrumbs in separate bowls. Then dip patties in flour, then milk, then breadcrumbs.
- 6
Prepare a pan with oil. Use enough oil to cover the whole on the pan. Heat on medium high heat and fry for around 5 minutes on both sides. When frying, cover pan with lid to cook the inside. Keep an eye on them to make sure they don’t burn and that they cook all the way on the inside.
- 7
Serve with salad and sauce. A red pepper sauce works well, or even mix some dill with some Greek yogurt!
