When I find apples getting dry and spongy in my fruit bowl, I often make these cupcakes. (Naturally, you can make these cupcakes using fresh Apples!) Because of the plenty of grated apple, these cakes are so moist even after a few days, only if they last that long.

Ingredients

12 Cupcakes
  1. 3Apples *peeled and coarsely grated
  2. 1& 1/3 cups Self Raising Flour
  3. 1/3 cupCocoa Powder
  4. 1 teaspoonBi-carb Soda
  5. 2/3 cupBrown Sugar
  6. 1/2 cupSultanas
  7. 2Eggs
  8. 100 mlCanora Oil or 125 g Melted Butter
  9. Nuts for topping *optional

Steps

  1. 1

    Preheat oven to 180°C. Line a 12-hole muffin pan with cases.

  2. 2

    Combine and shift dry ingredients. Add Eggs, Oil (or Butter) and grated Apples, and mix well. *Note: If you use only 1 or 2 Apples, add some Milk to soften the batter.

  3. 3

    Spoon the mixture into each case and place some chopped/sliced nuts. I used Almond Flakes this time.

  4. 4

    Bake for 20-25 minutes or until cooked through. Leave in tins for 5 minutes before moving onto wire rack to cool.
