Ingredients

  • 4 lb2nd cut brisket (or other appropriate potting meat)
  • 1 CanSan Marzano Tomatoes
  • Guinness/Beef Stock (optional)
  • 2medium-sized onions
  • 1 packagebaby carrots
  • Red Bliss Potatoes (about 5)
  • Salt
  • Pepper
  • Oregano
  • French Thyme
  • Additional beef seasoning (such as McCormack)

Steps

  1. 1

    Mix salt, pepper, oregano and accent in a dish.  Rub it on all sides of the meat.

  2. 2

    Put the meat in a large pot and sear on all sides until brown.

  3. 3

    Add the sliced onions.  Cover and cook on medium heat for 15 minutes until the onions are soft and the meat is juicy.

  4. 4

    Crush tomatoes and add one can water (better if you sub either Guinness or beef stock). Add this broth to pot containing meat and onions.

  5. 5

    Cook on low heat for about 1.5 hours, until soft.

  6. 6

    After done, slice meat against the grain and put it back in the pot.

  7. 7

    Add carrots and potatoes and cook on low heat until the carrots and potatoes are soft (about 2 hours).
