Season stake with black pepper and salt set aside

Cut peppers and onions julienne cuts(stripes) dice garlic.heat pan add onions and garlic cook for 1min to remove the raw edge of garlic,add peppers season with salt and pepper to taste. Add sugar and vinegar cook for 2 min

Cook rice use one cup of coconut milk with two cups of water,with 1 1/2 cups of rice

Heat pan until hot add oil place stakes cook for 2 min on each side,place a knob of butter,crushed garlic,thyme and baste

Remove stake let it rest for 10 min
