Ingredients

Makes 25 to 30 servings
  1. For the pastry dough:
  2. 4 cupsall-purpose flour (about 500 grams)
  3. 2/3 cupsugar (about 140 grams)
  4. 1 whole egg and 3 egg yolks
  5. 1/2 cup melted butter (about 100 grams) and 1/2 cup sunflower oil (about 100 grams)
  6. 1/2 packet baking powder for desserts (about 1 teaspoon)
  7. A pinch of cinnamon
  8. For the filling:
  9. Jam, chopped dark chocolate,
  10. Toasted and chopped almonds, ground cinnamon,
  11. Grated lemon zest

Cooking Instructions

    In a bowl, crack the eggs and add the sugar, melted butter, oil, baking powder, cinnamon, and finally the flour. Mix for a few minutes until combined. Let the dough rest in the refrigerator for at least 30 minutes.

    After the dough has rested, start filling the molds. I used metal molds, but you can also use paper ones.

    Once the molds are filled, bake in a preheated oven at 350°F (180°C) for about 20 minutes.

    If you like, you can use chocolate hazelnut spread for the filling, but traditional bocconotti are filled with jam.
