First, cook the pre-cooked hominy in a large pot so it opens up more. Add salt to taste, half the head of garlic, and half the onion.

While the hominy is cooking, blend the guajillo chiles with the remaining spices and set aside.

Once the hominy is ready, add the cleaned pork shank.

When the pork is cooked, add the blended chile mixture with the spices, chicken bouillon cubes, and oregano leaves.

Let it simmer until well seasoned. I usually check that the broth has released its fat.

Done! Serve with vegetables or on its own. Enjoy with a crispy tostada and spicy salsa.
