Beef with Vegetables Stir-Fry

Oriental food is known for being healthy. Among other things, the use of soy sauce allows us to avoid using salt, which is a great option for certain diets.

Additionally, the vegetables are usually not overcooked, so they retain their properties.

In this recipe, I chose to use leftover roast beef, but you can use another type of meat, as long as it doesn't have much sauce and isn't overcooked.

Ingredients

20 minutes
4 servings
  • 1 poundlean beef round or another lean cut. I used leftover roast beef
  • 2carrots
  • 1zucchini
  • 1/2green bell pepper
  • 1/2red bell pepper
  • 1/2orange bell pepper (if you don't have it, that's okay)
  • 1/2onion
  • 1 cupsoy sauce
  • 1 tablespoonbrown sugar
  • Asian noodles. I tried one usually used for soups, but it turned out delicious: soba
  • Olive oil
  • Sesame seeds

Steps

20 minutes
  1. 1

    Clean the vegetables and cut them into thin strips, or julienne.

  2. 2

    Slice the meat very thinly.

  3. 3

    In a wok, add a splash of olive oil and the onion. Sauté it for about three minutes over medium-high heat.

  4. 4

    Add the rest of the vegetables and stir to distribute the heat evenly. Increase the wok's temperature and let them cook for about 5 minutes, depending on how you like your vegetables.

  5. 5

    Add the beef and soy sauce with a teaspoon of brown sugar. Stir, and in five minutes, it should be ready.

  6. 6

    Cook the noodles according to the package instructions. For soba, three minutes should be enough.

    Serve everything together with sesame seeds.

Antes de nada os presento mi blog: http://www.lacocinademinia.es/Con esta página no pretendo sumar otra más al amplio mundo de páginas de recetas, sino que quiero ir algo más allá, a través de recuerdos, de reflexiones, trucos, consejos, gustos, etc. Al fin y al cabo, el momento de la cocina es un momento para estar con uno mismo y da lugar a pensar en infinidad de cosas.Mucha de la gente que ha pasado por mi mesa a comer me ha comentado la idea de abrir un restaurante…¡¡¡¡noooo!!! ¡Qué forma de odiar la cocina!. Al igual que me han insinuado que me presente a un concurso de cocina. Al próximo que me diga que me pesente a un concurso de cocina lo mando al Gran Hermano.Sí que es cierto que tengo dos estados diferentes en la cocina: disfrutándola- normalmente fines de semana y cuando viene gente a comer a casa-, y odiándola- cuando tengo que pensar TOOOODOS los días el menú del día siguiente-.Y cuando digo pensar, no sólo es pensar en lo que hacer de comer, sino repasar mentalmente los ingredientes que tengo en el congelador, en la nevera, en la despensa, los que tendría que comprar en caso necesario, en qué momento puedo ir a comprar, si antes o después de recoger a los niños en el cole, o entre que van a una clase o a otra,… ¡¡Lo odio!! Pero no por ello odio cocinar.Empecé este proyecto como terapia y porque, como dice mi madre, soy un “culo inquieto”. Siempre tengo que tener algo en mente y si supone un reto para mí, mejor. Como terapia, me ha servido, y con creces. Estoy teniendo mejor acogida de lo que esperaba y además, tengo a la familia encantada. Todos los días comen algo diferente. No os creáis que las fotos me las saco de internet, no. Las fotos son hechas por mí de platos cocinados por mí, lo cual me obliga a cocinar variado, aunque bien es cierto que no es muy diferente de lo que cocinaba anteriormente.
