Set oven to 180°C and grease a medium (2 or 3l) sized baking dish

In a medium bowl, beat the eggs and sugar until light and fluffy.
Add the apricot jam and beat well.
Add the remaining ingredients and beat for 3 minutes. - 3
Pour into the prepared dish and bake for 20 - 30 minutes or until done.

For the sauce: Place all ingredients in a pot and bring to a boil.
Remove from heat and pour over pudding while still warm. - 5
Serve with whipped cream and ENJOY! 😘
