Thai vegetarian noodles

In a saucepan add a little olive oil and the spinach. Cook down until soft.

Add onions, garlic, pine nuts and peppers and cook until onions are translucent, stirring every few minutes.

Add tomatoes and Knorr pots; stir together and simmer for 15 mins.

Add noodles and toss in pan until everything is hot.
- 5
Serve with garlic bread and small green salad.
