Bakwan is Indonesian version of tempura. Just like making a tempura, you will need to decide on your ingredients, this usually consists of assortment of vegetables . And you will need to prepare your batter. The most common bakwan is the vegetables version, in which shredded cabbage and shredded carrot are the two most popular choice. But you can add any vegetables you like 🤗, and sometimes, whole shrimps are added on the top of bakwan and the resulting fritter is usually called bakwan udang (shrimps fritter), though technically it should properly be called bakwan sayur dan bakwan udang (vegetables fritter and shrimps fritter).

Ingredients

  • 250 gramshredded cabbage
  • 150 gramshredded carrot
  • 100 grambeen sprout
  • 2scallions, thinly sliced
  • 50gram, Chinese parsley thinly sliced (optional)
  • 175 gramall purpose flour
  • 25 gramrice flour
  • 1 teaspoonsalt
  • 1 teaspoonsugar (optional)
  • 1 teaspoonground pepper
  • 175 mlwater
  • 1 teaspoongarlic powder (or o cloves of fresh garlic grated)
  • 1eggs (optional)
  • 2 tablespoonmelted butter
  • Vegetables oil for deep frying

Steps

  1. 1

    Add shredded cabbage, shredded carrot, and sliced scallions, Chinese parsley, been sprout, into the batter and mix well.

    Combine all purpose flour, rice flour, salt, sugar, garlic, egg and ground pepper. Add water and mix well, add the melted butter and make sure there are no lumps.

  3. 3

    Pour enough oil in a pot for deep frying. Once a bit of batter dropped into the oil bubbles immediately, the oil is ready.Use a small laddle and drop a laddleful of vegetables mixture into the hot oil. Deep fry until the fritter is crispy and turns golden brown on both sides, remove and drain on a wire rack/paper towel. Repeat until all batter is used up.

    Serve immediately with some Thai chilies, or with chili sauce.
