Ingredients

2 servings
  • 3lrg organic carrots
  • 1 tinblack eye, black or kidney beans
  • 1sml onion
  • 2 tbspsoy sauce
  • 1 tea spoonsweet & smoked paprika
  • 1 tspTom purée
  • 1 tspred wine vinegar
  • 2sml garlic clove
  • 1 tsporegano
  • 200 mlveg stock
  • as much coriander as pleases you
  • to tasteSeason

Steps

  1. 1

    Cook the onion off for a few minutes in whichever oil you prefer to cook with on a low heat. Add carrot and book for about 10 mins without browning.

    Add the Tom purée and spices covering all the carrots and cooking off for about 4/5 minuets.

  3. 3

    Add the oregano and garlic and stir well, cover with stock, beans, tamari and vinegar.

    Turn up the heat and allow to thicken.

  5. 5

    Note: Season and use your coriander to taste
