Cook the onion off for a few minutes in whichever oil you prefer to cook with on a low heat. Add carrot and book for about 10 mins without browning.

Add the Tom purée and spices covering all the carrots and cooking off for about 4/5 minuets.

Add the oregano and garlic and stir well, cover with stock, beans, tamari and vinegar.

Turn up the heat and allow to thicken.

Note: Season and use your coriander to taste
