Super Easy Rice Pudding

This is one of those recipes you make on a whim and don’t plan to share, but it turns out so well you make it again and want to share it with everyone! I already have a rice pudding recipe, but THIS one is definitely the easiest. I made it a bit freestyle (using the basics of rice pudding and especially the rice cooking method!) and it turned out delicious! Hope you enjoy it!

First, add the water, milk, sugar, cinnamon stick, and lemon peel to a pot and bring to a boil. Once it boils, stir the milk with a whisk. Add the rice, stir, and reduce the heat to medium-low.

Cook for 15 minutes, stirring every minute so the rice doesn’t clump or stick to the bottom. Remove from heat and let it rest for about 5 minutes.

Transfer to a large dish so it cools well.

Once cooled, serve with a little cinnamon sprinkled on top... a DELICIOUS dessert!
