Juchipila-Style Gorditas

Juchipila is a beautiful town located in the southern part of Zacatecas. Its cuisine is very rich, with the typical gorditas with salsa and cheese standing out. Some people prefer them with pork loin. They are delicious. I should mention that they are traditionally made by hand, but I haven't been able to do that, so I use a tortilla press. The result is very similar. Enjoy!

These are the ingredients to prepare the dough for the gorditas.

In a bowl, sift the masa harina with the flour and salt.

Mix well. Gradually add the water while kneading to form the dough for the gorditas.

Heat about 3 cups of oil in a large skillet.

Take small portions of dough and flatten them with a tortilla press; they should be thick. Place them in the hot oil, and after about 2 minutes, flip them so they cook on both sides.

Remove them and drain.

Place them in a colander to let any excess oil drain off.

Now, get ready to assemble the delicious gorditas. THE CLASSIC: Take a gordita and add green tomato salsa, queso fresco, and chopped onion. THE CHORIZO VERSION: Take a gordita and add refried beans, homemade chorizo, cabbage, crema, and hot sauce. They can also be made with pork loin, chicken, and more.
