In a large bowl, whisk the egg, oil, and vanilla with a hand whisk. Gradually add the milk, then gradually add the flour and baking powder, whisking well until you get a smooth and consistent batter.

Heat a non-stick pan and lightly grease it with oil. Pour about 1/4 cup of the pancake batter onto the pan, shaping it into a circle. Let it cook until the surface of the batter dries, then flip it to the other side. Repeat with the remaining batter.

Serve hot with jam, maple syrup, or spreadable chocolate, and add fresh fruits for extra flavor.
