Ingredients

Serves 3 to 4 servings
  1. 12 ozfresh bigoli pasta (about 350 grams)
  2. 3egg yolks
  3. 1whole egg
  4. To taste grated pecorino cheese
  5. To taste black pepper
  6. 7 ozspeck, sliced (about 200 grams)
  7. To taste salt

Steps

  1. 1

    In a skillet, heat a drizzle of extra virgin olive oil and cook the speck until crispy.

  2. 2

    In a bowl, whisk the eggs with the pecorino cheese and black pepper. Be generous with both.

  3. 3

    Cook the bigoli in salted water. When ready, drain and add them to the skillet with the speck, tossing everything together well.

  4. 4

    Add the egg and pecorino mixture along with a little pasta cooking water to make the sauce creamier.
