Ingredients

Serves 4 servings
  1. 14 ozrice (about 400 grams)
  2. 9 ozmozzarella cheese (about 250 grams)
  3. 2eggs
  4. 4 tablespoonsgrated Parmesan cheese
  5. 2 cupstomato sauce (add more or less to taste)
  6. Breadcrumbs, as needed for the mixture
  7. Salt, to taste
  8. 2 tablespoonsextra virgin olive oil

Steps

    For a more flavorful sauce, you can add herbs and aromatics like parsley or garlic if you like. (I kept it very simple for this recipe.)

    Cook the rice in plenty of salted water.

  3. 3

    Drain the rice while it's still slightly firm, let it cool, then gradually mix in all the ingredients: eggs, Parmesan, tomato sauce (a little at a time, to taste), and enough breadcrumbs to keep the mixture soft but not runny, since baking can dry it out.

    Season with salt and add the olive oil.

  5. 5

    Cut the mozzarella into thin strips.

  6. 6

    Take a bit of the mixture in your hands, place some mozzarella in the center, and shape it into elongated balls, like in the photo!

  7. 7

    Quickly roll each in breadcrumbs.

  8. 8

    Bake at 350°F (180°C) for 15-20 minutes.

  9. 9

    Check for doneness and golden color based on your oven and your preference.
