For stuffing,
I took boiled, peeled and mashed potatoes.
Heat oil in a pan, crackle mustard seeds, jeera and hing. Add 1/2 cup chopped onions and saute till pink. Add turmeric powder, red chilli powder and salt as per taste. Add a tsp water, then add mashed potatoes and give a good mix. Sprinkle chopped coriander.. - 2
For flour batter,
1 cup besan + 1 tbsp rice flour + chopped coriander and green chillies + salt as per taste + pinch of ajwain.
Add water to make a batter from these ingredients. - 3
Remove caps from washed mini capsicum.
Hollow it, fill in the stuffing till brim.
Dip in flour batter and deep fry in hot oil till golden brown (medium flame)
Serve hot 🔥
