Rice and Semolina Pancakes

These pancakes taste really nice. You could either make mini pancakes or also use this batter to make "instant dosa". Along with the chillies, you can also add finely chopped onions and tomatoes or any veggies of your choice. These pancakes are ideal for breakfast or even for packed lunch boxes.

In a big mixing bowl, add rice flour, Semolina, green chillies, salt, yogurt and water. Mix well and leave it aside for 20 minutes.

Then add lemon juice and baking soda to the batter and mix well. The batter should be of pouring consistency, if not you can add a little water to reach the consistency.

Heat a pan on medium heat and spray it with oil, then pour a ladle of the batter into the pan. Cook it till bubbles form on the surface and the shine disappears from the surface. Then flip it over and cover the pan and cook for 3-4 minutes. Take it out from the pan. Repeat the same process for the remaining batter.

Ready to serve with a chutney or dip of your choice.
