Grind urad dal, poha and fenugreek seeds into fine paste. Add ragi flour give a nice mix and keep it for fermentation. Morning add salt.

For Potato sabzi, boil potatoes and roughly mashed it.In a kadai add oil, then Cumin, mustard, then add finely chopped onion, curry leaves and saute for seconds.

Add ginger garlic paste, green chillies and stir, add turmeric, salt, chopped coriander and mix well. In the last add lemon juice.

For Red Chutney.Take red chillies,add fried chana dal,salt, tamarind,Cumin, ginger garlic and make a fine paste. Keep aside.

Now heat dosa tava spread dosa, spread red chutney all over dosa in a corner put potato sabzi and fold the dosa.Remove and serve with coconut chutney.
