Heat vegetable oil in a pan. Sauté the garlic, then crack in the egg and scramble until cooked.

Add the pork and season with oyster sauce, fish sauce, and light soy sauce. Add a splash of water to prevent burning.

Add Chinese broccoli and diced carrot. Stir-fry until the vegetables start to soften. Add the wide rice noodles and dark soy sauce. Stir-fry for a few more minutes until everything is cooked through. Sprinkle with ground black pepper and serve.
