Gently fry the onions and garlic on a medium heat, in oil, for 5 mins until they turn translucent and are starting to soften.

Add the herbs, salt, pepper and stock, tomatoes (tinned and fresh) and butter beans to the pan and allow to simmer, partially covered for 15 minutes.

Allow to cool slightly before blending. If you don’t have a blender, then serve as a rustic, chunky soup.
