Pineapple Upside-Down Cheesecake

Crush the cookies and mix them with the cinnamon and butter. Line the bottom of the pan with parchment paper, pour in the caramel, and place the pineapple slices on top. Put the cherries in the holes of the pineapple slices and cover the pineapple with the crushed cookies, pressing down well.

For the cheesecake: Blend all the ingredients well and pour into the pan. Bake at 340°F (170°C) until set.

Unmold when cold.
