In a pot, add the meat, finely chopped onion, and oil. Sauté well, then add the quartered carrot and zucchini, and sauté again. Add the tomatoes (peeled and chopped) and tomato paste, and cook until well combined.

Add the chickpeas (soaked overnight), cilantro, spices, and salt. Sauté everything together.

Pour in hot water to cover and let it cook.

Once the meat is cooked, add the rinsed freekeh and let it cook until tender, then turn off the heat.

If you like it spicy, you can add some chopped hot pepper when you add the freekeh.
