Preheat the oven to 180°. Grease an 8" baking tin and set aside. Put a sauce pan into the fire in it put sugar, butter, dried fruits and the Orange juice. Stir nicely

As it starts bubbling add all.your spices and stir. When it comes to a boil, reduce the heat to low & let it simmer for 5 min as you continue stirring

After 5 min remove from the heat & let it cool completely to lukewarm.

Meanwhile sieve the flour, baking powder and salt. Give it a quick whisk to make sure the ingredients are well mixed. Add the chopped nuts and mix completely.

In a separate bowl, put the eggs add vanilla extract and whisk completely until fluffy

Add the egg mixture into the nuts mixture and stir well.

To the wet mixture add your flour in bits making sure you stir completely until you are done.

Put your mixture into your greased baking tin. Bake for 40-45 min.
