I am a cheapskate and to make good of my funds I always look behind the store salads to see what is in them and just go home to attempt them. Instead of having them at one go I normally have them more than once. And since I love freahly prepared food I find microwave more faster to make this and less messy. And it's a super food and very light and I would recommend it if one's on a diet. #microwavechallenge

To cook the bulgar wheat, add half a cup of boiling water to an air tight container and let it rest for 20 minutes before cooking.

After 30 minutes most of the water will have been absorbed. Place the microwave container in a microwave and set the timer for 2 minutes. Depending on how fast your microwave works, add an additional minute and stiring with a fork until all The water is absorbed and cooked through.

Add salt and all the ingredients (tomatoes, cucumber, chives and lemon juice) excluding avocado and mix with a fork.

Leave in a fridge for 30 minutes or until cold. Season with salt

Add avocados and serve cold.
