Ingredients

  • 5 lbsground pork
  • 4 tspkosher salt
  • 3 tspfreshly ground black pepper
  • 3 tablespoonsancho Chile powder
  • 1 headfinely minced garlic
  • 3 tablespoonsdried oregano
  • 3 tablespoonscumin seed ground
  • 3 tspcoriander ground
  • 6 tablespoonsdistilled vinegar

Steps

  1. 1

    Mix all ingredients in a large mixing bowl cover and refrigerate overnight

  2. 2

    Separate into one pound portions and wrap to freeze for use as needed
