Malabari parotta is layered flatbread made of maida . I've added spices to it and wheat flour to give it a different flavor.

Malabari parotta is layered flatbread made of maida . I've added spices to it and wheat flour to give it a different flavor.
Steps

Mix all the ingredients except water and ghee for frying. Mix well till the flour resembles crumbly texture.

Add little water at a time and start to knead the dough. The dough should be soft.

Now roll a small portion of dough into a big chapati. Apply ghee/oil to it and sprinkle some dry flour on it.

Start folding the chapati into fleets like fan fold. stretch the folded parotta a little and start folding it into a circle from one end. And keep this rounded parotta to a side for 5mins.mean time prepare more parotta like this.

Now take onw parotta roll and start rolling it again using dry flour. Now you'll see swirl design on the parotta.

Heat a tawa, and cook the parotta from both sides till golden brown and slightly crisp.. You'll see that the layers are separating.

Serve the spiced malabari parotta with any curry or you can enjoy it with pickle and butter
