  1. 1 poundboneless skinless chicken breasts
  2. 1/4 cupbrown sugar
  3. 2 tablespoonspeanut oil
  4. 1/2 cuppineapple chunks in juice
  5. 1/2 cupchopped pineapple
  6. 1/2 cupchopped carrots
  7. 1/2 cupchopped green bell pepper
  8. 1/2 cuprice vinegar
  9. 1/4 cupcorn starch
  10. 1 teaspoonsalt
  11. 1 teaspoonpepper
  12. 1 tablespoonsoy sauce
  13. 1/4 cupwater

    Pound 1 pound of boneless skinless chicken breasts to 1/2 inch thick.

    Cut into 1 inch cubes.

  3. 3

    Sprinkle the chicken with 1 teaspoon salt and 1 teaspoon pepper.

  4. 4

    Add 2 tablespoons of peanut oil on a skillet over medium-high heat and spread evenly.

  5. 5

    In a large bowl, mix together

  6. 6

    When the oil heats to 350 degrees Fahrenheit, add the chicken pieces to the skillet.

  7. 7

    On a skillet over medium heat, mix 1/4 cup brown sugar and corn starch together. Add 1/3 cup rice vinegar, 1/2 cup pineapple juice, 1 tablespoon soy sauce, and 1/4 cup water. Heat to a boil for 1 minute, stirring occasionally. When the sauce thickens, transfer the liquid to a bowl.

    Cook for 2 minutes, stirring occasionally, then add 1/2 cup each of chopped pineapples, chopped green bell peppers, chopped white onions, and chopped carrots.

    Cook for an additional 2 minutes, stirring occasionally.

    Add the sweet & sour sauce to the skillet and mix.
