Ingredients

  • 9 ozlard (250 grams)
  • 2.2 lbsmasa harina (about 1 kg)
  • 2-4 cupsbroth for savory tamales
  • 10.5 ozground meat (300 grams)
  • 2 cupsadobo sauce
  • Corn husks
  • 1 teaspoonbaking soda

Steps

    Beat the lard with the baking soda until it turns white and fluffy.

    Mix the masa harina with the lard, gradually adding the broth until you have a thick, consistent dough.

    Prepare the filling by mixing the ground meat with the adobo sauce.

    Spread the dough onto the corn husks, add a little adobo filling in the center, and wrap tightly so it doesn't spill out.

    Arrange the tamales in a steamer, cover with extra corn husks to keep in the moisture, and steam over low heat.
