
Cooked Tomato and Green Pepper Salad

Grill the green peppers until roasted. Then peel, remove the seeds and cut them into thin slices.

Slice a shallow in the bottom end of each tomato and place them in boiled water for 2 minutes. Remove the tomatoes and peel their skin, then cut them into small cubes.

Transfer the garlic cloves along with their oil to a pan. Add in the cubed tomatoes and stir constantly over low heat for about 20 minutes.

Mix in the green peppers, and continue stirring for few minutes. Then simmer over low heat until the tomatoes absorb the sauce. Season to taste with salt and pepper.

This salad is tastier when served hot, but you can also serve it cold.
