Ingredients

about 2 servings
  1. 8.8 ozfresh orecchiette pasta (250 g)
  2. 1medium potato
  3. 7 ozfresh spinach, cleaned (200 g)
  4. 1.4 ozalmonds (40 g)
  5. 1 tablespoongarlic-infused oil
  6. 3 1/2 tablespoonsextra virgin olive oil (50 ml)
  7. Salt, to taste
  8. 4-5basil leaves
  9. 1.8 ozgrated Parmesan cheese (50 g)

Steps

  1. 1

    Clean and wash the spinach, steam it, and let it cool.

  2. 2

    In a tall, narrow bowl (like the one for an immersion blender), add the spinach, almonds, garlic-infused oil, olive oil, basil, Parmesan, and salt. Blend everything until you get a pesto.

  3. 3

    Peel and wash the potato, cut it into medium-sized cubes, and boil the cubes in the same water you’ll use to cook the orecchiette.

  4. 4

    Once the orecchiette are cooked, drain the excess water and toss them with the spinach pesto, mixing well.

  5. 5

    Your dish is ready to serve.
