Ingredients

  1. 2 cupsPoha (Flattened Rice)
  2. 2 cupsWater
  3. 1/2 cupchopped Onion
  4. 1/2 cupdiced Potatoes, Boiled
  5. 1 tspchopped Green Chillies
  6. 1 sprigCurry Leaves
  7. 2 tbspchopped Coriander Leaves
  8. 1 tspMustard Seeds
  9. 1/4 tspTurmeric Powder
  10. to tasteSalt
  11. 2 tbspCooking Oil
  12. 2 tspLemon Juice

Steps

  1. 1

    Put poha in a bowl and add water. Mix and let it soak for 2 minutes. Drain the water and keep aside.

  2. 2

    Heat oil in a pan. Add mustard seeds and allow it to crackle. Add curry leaves and onions and saute for 2 to 3 minutes.

  3. 3

    Add green chillies, turmeric powder and potatoes. Stir fry on low heat for about a minute.

  4. 4

    Add poha, lemon juice, salt and half of the coriander leaves. Stir well and then turn off the heat.

  5. 5

    Cover the pan with the lid and let the poha absorb all the flavours. Keep closed for 2 minutes.

  6. 6

    Transfer poha to a serving dish. Sprinkle coriander leaves.
