Rinse the pork, pat dry, and slice thinly as shown.

Peel and finely mince the shallots, garlic, and lemongrass, then add to the sliced pork.

Add 1 teaspoon ground black pepper.

Add a pinch of salt.

Add 1 tablespoon fish sauce.

Add 2 tablespoons honey.

Add a little chili paste.

Mix the seasonings into the pork by hand and marinate for 30 minutes.

After marinating, arrange the pork on a grill rack and grill over charcoal until evenly golden brown.

Cut the pork fat into small pieces and render in a pan until crispy.

Finely chop the scallions, add them to the pan with the crispy pork fat, stir for a few seconds, then turn off the heat.

The most important part of this dish is making a delicious fish sauce. Add garlic, chili, and sugar to a mortar.

Pound until the garlic is no longer visible.

Squeeze lime juice into the garlic-chili mixture, then add good-quality fish sauce and stir until the sugar dissolves.

To serve, place the noodles, grilled pork, scallion oil, and chopped fresh vegetables in a bowl. Pour the fish sauce over and sprinkle with a few roasted peanuts. Mix well and enjoy!
