Burrito with pea guacamole & marinara sauce

For guacamole:In a food processor, combine all ingredients and Pulse until you reach a guacamole like consistency (pureed).

For marinara sauce:Heat a medium saucepan over medium - low heat. Add the olive oil to the pan, allowing it to warm for 1 minute,then add the garlic and saute it for 2 minutes, stirring constantly until it's golden brown and fragrant.

Add the puree of tomatoes, salt, pepper, sugar and crushed Red Pepper flakes stirring to combine.

Simmer the sauce for 7 minutes, and Stirring occasionally and then your sauce is ready.

For Burritos:Meanwhile, in a large Skillet, saute green pepper and onion in oil until tender, 3 to 4 mins.

Add garlic ; cook 1 minute longer. Stir in the chilli powder, cumin and Pepper flakes until combined.

Add beans and rice cook and stir until heated through, 4 to 6 mins.

Spoon about 1/2 cup of filling off-centre on each tortilla ; top with one tablespoon of Guacamole.

Fold sides and ends over filling and rollup.

Then serve this burrito with guacamole and marinara sauce.
